Admittedly, this isn’t the quickest recipe to make, because to it takes a good chunk of time to make grits properly, but it’s so easy! Grits just need an occasional stir as they cooks to avoid clumps and keep them from sticking to the pot. I’d been craving buffalo sauce for awhile now, and am so glad that craving culminated in this incredible pizza. Everything about this vegan pizza is pure perfection. There are spicy, salty, vinegary, buttery vibrantly orange-colored soy curls. A creamy and tangy homemade ranch dressing. A doughy pizza base that cooks up nice and crisp on bottom with a soft, puffy crust. Rich, delicious vegan mozzarella cheese completes the pizza, but don’t forget the scallions in all their oniony glory, and a drizzle of hot sauce to finish. Many tears were shed over how much we enjoyed this pizza (ok, maybe not actually, but emotionally, we were there)….
Have you guys ever had tinga? It’s a traditional Mexican dish where shredded chicken (which is easily substituted to make it vegan) is cooked in a tomato, onion, and chipotle in adobo sauce. The simple sauce is made of only TEN ingredients and packs a ton of flavor. It’s tangy and smokey, tomatoey and oniony, and oh so mouth-watering delicious. It quickly became a favorite around here, to the point where we made 4 batches in one week–in part because the first day I made it Omar ran out to the store for more tortillas (not that we were out yet) and brought home a 5-pound bag of them. Did you know they sold tortillas in 5 lb bags? Me either. For those of you concerned about our current tortilla status, we had some friends over for a tinga taco party (I highly recommend you do the same) and that took care of most of them….
