Vegan Carrot Cake
1 layer cake
First whisk together your dry ingredients. Measure by weight for the best results!
Stir together the wet ingredients to make a thick batter. Some dry spots are okay because we still have to add the carrots!
Fold in the Carrots
Gently mix in grated carrots and chopped walnuts. The walnuts are optional, and if you must, feel free to add raisins.
Divide the thick batter between pans and bake until a tester comes out clean.
Let the cakes cool fully before decorating. For best results, refrigerate first!
Make marzipan carrots, pipe decorations, and use chopped walnuts to make your cake beautiful!
